Book Talk: Behind the Kitchen Door (C-Span) Saru Jayaraman talked about her book, Behind the Kitchen Door, in which she discusses the experiences of U.S. food industry workers, who make up the second largest private sector workforce in the country. She argued that these individuals, even those who work at restaurants that champion fair-trade food options, are paid the lowest wages and experience some of the worst working conditions of any workers in the country.
